I don’t own a scale but I can tell when I am gaining weight by how my jeans are fitting and my jeans have been fitting kind of tight. Mr. Man and my son always say “Oh, you look just fine.” which means do not start cooking a bunch of diet food for us to eat.
On Sundays, I generally make chicken fried rice about a couple times a month and my family loves it, however, the carbs (the rice) makes for allot of calories.
Over the weekend, I saw on Instagram about the riced cauliflower which in the frozen vegetable aisle in most supermarkets and it’s fairly cheap because I think I paid like a $1 for package of the riced cauliflower at Ralphs. A cup of the riced cauliflower is only 25 calories.
I made the chicken fried rice (no the rice was not fried) using the riced cauliflower but I didn’t tell the family that I had replaced the regular rice. They loved the healthy chicken fried rice and ate second helpings, although they did say it could have used a bit more seasoning!
