On cooler days, we tend to like a more hardier meal. During the winter, I love chicken fried steak smothered in gravy and rice. We all know that rice is a carbohydrate that turns into sugar that spikes our insulin levels and eventually turn into excess fat.
I’ve tried the frozen cauliflower rice, a couple of times, previously and it was disgusting. However, recently, I was watching a cooking video on YouTube and the lady actually fried the frozen cauliflower rice to dissipate the moisture and it made the cauliflower rice fluffy. She also seasoned the rice while it was cooking. I also used a little bacon grease on the bottom of my pan when I made the rice.
Anyways, last week, when it was cold in San Diego, I made baked chicken with cream cheese, spinach, shredded cheese and I had the cauliflower rice as a side dish. The meal was absolutely delicious including the faux rice.
The thinly slicked chicken is lightly seasoned prior to adding with cream cheese.
I’ve been getting the cheap spinach at Vons. I didn’t chop up the spinach, I just added it on top of the cream cheese.
I then added the shredded cheese. I can’t remember what type of shredded cheese I’d used but it was probably a blended shredded cheese.
I sprinkled the Grill-Mates Roasted Garlic & Herb seasoning on top and I cooked the chicken on 405 degrees for 30 minutes. It was a super quick and tasty meal!
